Responsible for all aspects of the Food & Beverage Operation.


Essential Duties and Responsibilities

  • Prepares annual business plan and monthly reports as needed. Reports year-to-date variances as it pertains to the budget on a monthly basis.
  • Responsible for scheduling of employees, equipment, and supply requirements for the Food & Beverage department. Maintains accountability for the cost, utilization, and performance of employees and equipment.
  • Trains and develops the Food & Beverage management team and employees for potential advancement.
  • Implements policies and procedures for the Food & Beverage department. Ensures all policies and procedures are adhered to by the Food & Beverage employees.
  • Develops along with the Executive Chef seasonal menu concepts for a la carte outlets and banquet menus for private parties.
  • Assumes responsibility for the cleanliness and proper set-up of all dining outlets, meeting spaces, and banquet rooms. Verifies maintenance of all equipment is current in these areas.
  • Ensures quality levels of food and beverage products maintain Ibis's high standards in production and service to exceed member/guest satisfaction.
  • Verifies and maintains the accuracy of prices, state taxes, tips, and other charges on all guest checks and ensures checks are accurately opened, closed, and operate within the point of sale system.
  • Ensures compliance of operating guidelines of all state and federal laws relating to the Alcohol, Cigarette, and Tobacco Division.
  • Implements and monitors internal financial controls for the Food & Beverage department, in addition to monitors Food & Beverage payroll policies, procedures, and controls, with an emphasis on minimizing employee labor costs.


Other Functions

  • Attends House Committee meetings.
  • Prepares articles and calendar of events for Club newsletter.
  • Develops and maintains the marketing and promotional programs as they relate to the Food & Beverage department.
  • When needed, meets with potential clients/members, provides facility tours, and assists with event planning.
  • Ensures daily pre-shift meetings occur to relay pertinent information for the day's meal period activities.
  • Operates within all guidelines, policies, standards, and constraints as established the company. Assists in the implementation of Club mandatory standards of operations as they relate to the Food & Beverage operations.

Supervisory Responsibility

Manages 7-10 subordinate supervisors who supervise a total of 60-80 employees in the Food & Beverage Operation. Is responsible for the overall direction, coordination, and evaluation of these units. Also directly supervises one non-supervisory employee. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Education and/or Experience

Bachelor's degree (B. A.) from four-year college or university; or one to two years related experience and/or training; or equivalent combination of education and experience. Thorough knowledge of general business administration practices and state liquor laws as applied to food and beverage service operational practices and procedures as would be acquired through three to five years of similar experience in progressively responsible positions. 


Language Skills

Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations.  Ability to write reports, business correspondence, and procedure manuals.  Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.


Mathematical Skills

Ability to work with mathematical concepts such as probability and statistical inference, and fundamentals of plane and solid geometry and trigonometry.  Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.


Reasoning Ability

Ability to define problems, collect data, establish facts, and draw valid conclusions. Ability to interpret an extensive variety of technical instructions in mathematical or diagram form and deal with several abstract and concrete variables.


Computer Skills

  • Must have proficient Microsoft Office skills.
  • Must have experience in POS programming and maintenance.

  • Valid driver's license
  • ServSafe Certification

  • Ability to articulate and confirm an understanding of directives

While performing the duties of this Job, the employee is occasionally exposed to wet and/or humid conditions; moving mechanical parts and extreme heat. The noise level in the work environment is usually moderate.
